NEER DOSA RECIPE | நீர் தோசை ரெஸிபி | नीर दोसा रेसिपी

Neer Dosa  is a breakfast recipe which is well known in Karnataka.  It is made of Raw rice and coconut.  This can be made very easily with just these two ingredients. Try this recipe with the help of this demo on the link below:

INGREDIENTS:
RAW RICE - 1 cup
COCONUT - 1/2 cup(chopped)
SALT - As per taste
WATER - To grind

PREPARATIOM METHOD:
1) Wash and soak raw rice in water for 2 hours
2) Take a mixer jar and add soaked rice, coconut and salt
3) Grind to smooth batter
4) Add more water to make it watery consistency
5) Heat tawa and grease(just rub) with some oil
6) Concave tawa is more preferable - batter spreads evenly 
7) If it is a concave tawa, pour a ladle of batter  from all around the edges, to form a thin layer 
8) Close lid and reduce to medium flame
9) After 2 or 3 minutes, open lid and wait for 2 more minutes
10) Now take out the dosa and transfer to plate
11) Your tasty & crispy Neer dosa is ready
12) Serve hot with a spicy chutney

RAVA KITCHADI RECIPE | रवा किचडी रेसिपी | ரவா கிச்சடி ரெஸிபி 



INGREDIENTS:

CINAMON- 1 inch piece
CLOVES - 3
ANISEEDS - 1/2 tsp
ONIONS - 2
TOMATOES - 2
GREEN CHILLIES - 3 or 4
GINGER GARLIC PASTE - 1/2 tbsp
BEANS - 1 cup
CARROTS - 1 cup
GREEN PEAS - 1 cup
OIL - 2 to 3 laddles

PREPARATION METHOD: 
1) Heat pan
2) Add 2 or 3 ladles of oil (use oil generously for better taste)
3) Add Cinamon, Cloves and Aniseeds
4) When Aniseeds start spluttering add finely chopped Onions
5) Add ginger garlic paste saute till raw smell goes
6) Now add tomatoes and saute till it gets smashed
7) Add green chillies
8) Add 1 cup each of carrots, beans and green peas
9) Saute well, add water
10) Add salt to taste and let water boil 
11) Lower the flame and add one and a half cup of roasted rava
12) Add a tblsp of ghee on top and close lid and let boil for ten          minutes
13) Open lid and add finely chopped coriander leaves
14) Mix well and your tasty Rava Kitchadi is ready
15) Serve hot with coconut chutney

NEER DOSA RECIPE | नीर दोसा रेसिपी | நீர் தோசை ரெஸிபீ 



INGREDIENTS:

RAW RICE - 1 cup

COCONUT - 1/2 cup
SALT TO TASTE

PREPARATION METHOD:


1) Soak 1 cup raw rice for 2 hrs

2) Grind soaked raw rice, coconut and salt into smooth batter
3) Add 2 to 3 cups of water to the batter and dilute it to watery consistency
4) Heat thawa and pour one ladle of watery batter on it
5) Spread it evenly on the thawa and add a few drops of oil
6) Cover the dosa with a lid and keep in medium flame
7) After 2 to 3 minutes, open the lid
8) Slowly the edges of the dosa starts lifting up
9) Do not flip the dosa
10) Your crispy and white Neer dosa is ready... Remove from thawa and transfer to a plate
11) Serve hot with any chutney or even sambar

VEN PONGAL RECIPE | वेन पोंगल रेसिपी | வெண் பொங்கல் ரெஸிபி 




     Ven pongal is one of the favourite breakfast item of South India.  It is made out of rice and moong dhal.  There are two types of pongal, Chakkarai or Sarkarai pongal which is made with jaggery and Ven pongal is the salted version of pongal. Try this easy recipe at home with the help of the instructions below


INGREDIENTS:

RICE - 2 cups
MOONG DHAL - 1/4 cup
CUMIN SEEDS - 1 tbsp
PEPPER CORNS - 1 tbsp
ASAFOETIDA  POWDER- 1/2 tsp
CASHEWNUTS - 10 or 12
GINGER(CRUSHED) - 1 tbsp
GREEN CHILLI - 1 (SLIT)
CURRY LEAVES - a few
SALT - to taste
OIL - 1 laddle
GHEE - 2 tbsps

PREPARATION METHOD: 

1) Wash rice and moong dhal and set aside
2) In a pressure pan, heat 1 laddle of oil.  
3) Add cumin seeds and pepper corns 
4) When it starts spluttering, add 1/2 a tsp of asafoetida powder
5) Immediately add 1 tbsp of crushed ginger, green chilli and curry leaves
6) Saute a little and add 7 cups of water
7) When water starts boiling, add washed rice and moong dhal
8) Add salt to taste
9) Cover the pan and pressure cook till five whistles
10) Open pan and add cashewnuts, fried in ghee
11) Mix well and your tasty Ven Pongal is ready
12) Serve hot with Kotsu or Chutney

INGREDIENTS:
1 laddle Oil
1 tsp Mustard
1 tsp Urad dhal
1 tbsp Channa dhal
1 tsp Cumin seeds
1 tsp Asafoetida
1 sprig Curry leaves
1 tbsp Ginger(finely chopped)
1 tbsp Green Chillies(finely chopped)
5 cups Water
2 cups Rice rava / Broken rice(raw or boiled)
1/2 cup grated coconut
Salt as er taste

PREPARATION METHOD:
1. Heat oil in a pressure pan 
2. Add 1 tsp mustard
3. Next add 1 tsp urad dhal and 1 tbsp channa dhal
4. Add 1 tsp cumin seeds
5. When it starts spluttering, add curry leaves
6. Now add 1 tbsp Ginger(finely chopped) and 1 tbsp Green                Chillies(finely chopped)
7. Saute well and add 5 cups of water
8. When water starts boiling lower the flame
9. Add 2 cups of Rice rava/Broken rice.  t can be raw rice or boiled rice.  For boiled rice you should add extra 1/2 cup of water 
10. Add salt as per taste 
11. Close lid and pressure cook till five whistles
12. Open lid and mix well
13. You can add finely chopped coriander leaves(optional)
14. Your simple, quick and easy, yet tasty tiffin or breakfast is ready

INGREDIENTS:

For Grinding:
1 cup Raw rice
1 cup Boiled rice
1/4 cup Thoor dhal
1/4 cup Channa dhal
1/4 cup Urad dhal
1/4 cup Coconut
3 or 4 Red Chillies
1 tsp Ani seeds 
Salt to taste
1 tsp Asafoetida

For Sauteing:
2 or 3 tbsps Oil
1 tsp Mustard
1 tbsp Urad dhal
1 tbsp Channa dhal
1 tsp Cumin seeds
1 cup Onion(finely chopped)
1 tbsp Green Chillies(finely chopped)
1 tbsp Curry Leaves( chopped)

2 tbsps Coriander leaves
1 tsp Turmeric powder

PREPARATION METHOD:
1. Soak Raw rice and Boiled rice together for 2 hours
2. Soak all the three dhals together for 1 hour
3. Grind soaked Raw rice and Boiled rice along with Coconut, Red  chillies, Salt, Ani seeds and Asafoetida.
4. Grind to a smooth batter and set aside
5. Now grind soaked dhals separately into a coarse batter (*Use whipper, do not grind smooth)
6. Add to the rice batter
7. Heat oil in a pan
8. Add Mustard, Urad dhal, Channa dhal and Cumin seeds
9. When it splutters, add 1 cup of finely chopped onions
10. Also add 1 tbsp finely chopped Green chillies and 1 tbsp Curry leaves 
11. Mix well 
12. Add water and adjust consistency
13. Finally add 2 tbsps finely chopped Coriander leaves and 1 tsp Turmeric powder 
14. Mix well and your Paruppu Adai batter is ready
14a. At this stage, you can add few Moringa leaves to the batter and make Moringa Leaves Adai which is one of the favourites of the people of Chennai
15. Heat tawa and pour 2 laddles of Adai batter and spread evenly
16. Add 1 tbsp oil on top and roast both sides in medium flame
17. Your crispy and tasty protein rich Paruppu Adai is ready
18. Serve hot with Aviyal or Chutney of your choice
19. Adai usually goes well with Aviyal, a mixed veg curry

KERALA PUTTU RECIPE | KUZHA PUTTU RECIPE | RED RICE PUTTU RECIPE | केरला...


Puttu is a recipe of Kerala, which is very healthy and tasty.  Healthy because, it is a steamed recipe, and no oil or frying.  Puttu can be made both with white rice flour and red rice flour.  Puttu can also be made with ragi flour, jowar flour, wheat flour, etc.  Puttu flour is made by washing rice and drying it in shade and then dry grinding  it into smooth powder and then  dry roasting the flour in medium flame until it gives out an aroma.  Ready made puttu flour is also available in market.  In this video, I have made use of the ready made puttu flour.

INGREDIENTS:
2 cups Red rice puttu flour
1/4 tsp salt
Required water to make the flour moist
1 cup grated coconut
2 tbsps ghee
2 tbsps chopped cashewnuts
Sugar as required
1 tsp cardamom powder

PREPARATION METHOD:
1. In a mixing bowl, add 2 cups of red rice puttu flour
2. Add 1/4 tsp of salt
3. Sprinkle water little by little and mix well until the flour is fully moist
4. Break lumps completely
5. Heat water in the puttu steamer
6. In the puttu maker/kuzha add 1st layer grated coconut, 2nd layer moist red rice puttu flour, repeat layers and finish with coconut layer
7. Close lid and place on puttu steamer
8. Steam for 10 minutes
9. Your steaming Red rice kuzha puttu is ready
10. Fry 2 tbsps chopped cashewnuts in 2 tbsps ghee 
11. Pour on the steamed puttu 
12. Add required sugar and a tsp of cardamom powder
13. Mix well and your Red rice sweet puttu is ready
14. You can avoid sugar and enjoy your steaming puttu with Kadala curry also

MOOLI KA PARATHA RECIPE/मूली का पराठा रेसिपी


Mooli is nothing but Radish.  Radish is a watery vegetable and good for health.  It reduces the heat in our body.  Here is a recipe with this vegetable which can be had for breakfast, lunch or dinner.  It is also easy for packing lunch box. 
Parathas are usually made circle in shape.  But here I have made parathas in semicircle shape which is very easy to make.  Please watch this demo and do try it at home.

INGREDIENTS:

FOR STUFFING:
2 tbsps oil for sauteing
1 tbsp Cumin seeds
1/2 Kg grated white Radish
1 Onion, finely chopped
2 Green Chillies, finely chopped
2 tbsps Coriander leaves, finely chopped
Salt to taste

FOR PARATHA DOUGH:
2 cups Wheat flour
1/4 tsp salt
1 tbsp oil
Water, as required

PREPARATION METHOD:
1. Heat 2 tbsps of oil in a pan
2. Add 1 tbsp cumin seeds
3. When it splutters, add finely chopped onions
4. Add Green chillies, salt to taste 
5. Saute for a minute and close lid
6. After 5 minutes, open lid
7. Radish is fully cooked 
8. Add chopped coriander leaves at this stage
9. Mix well and set aside
10. For preparing dough, take a mixing bowl
11. Add 2 cups of wheat flour
12. Add 1/4 tsp of salt and 1 tbsp of oil and mix well
13. Add water little by little and knead into soft dough
14. Take small ball size dough and roll 7- 8 inches big roti
15. Spread radish stuffing on one half of the roti
16. Fold the other half on it and seal the sides by pressing with your fingers
17. Roast on a tawa by adding oil/ghee on both sides
18. Your Mooli ka paratha is ready
19. Serve hot with yogurt and pickle

     Jowar is a millet, which is also called as Bajra in hindi and Kambu in Tamil.  It is full of protein and a very healthy substitute for rice.  It is also tastier than any other millet.  We get Jowar powder in almost all departmental shops.  With Jowar powder you can make a quick, easy and healthy breakfast within no time.  Here is a Jowar Dosa recipe, which is very easy to make, tasty and nutritious too.

INGREDIENTS:
1 cup Jowar flour
½ cup rice flour
1 cup finely chopped Onions
2 green chillies, finely chopped
2 tbsp coriander, finely chopped
Salt to taste
3 cups water

PREPARATION METHOD:
1.  Take a bowl and add 1 cup of jowar flour.
    2.  Add ½ cup of rice flour
    3.  To this add 1 cup finely chopped onions
    4.  Add finely chopped green chillies
    5.  Add finely chopped coriander
    6.  Add salt to taste
    7.  Add water and mix well
    8.  Batter should be in watery consistency    
    9.  Jowar dosa batter is ready   
  10.  Make crispy and tasty dosas
  11.  Jowar dosa is very nutricious and good for health

     Akki Roti is basically a famour Karnataka dish made out of Rice flour.  In kannada, Addi means rice.  Roti made out of rice flour is called Akki Roti.  Extra ingredients like onion, green chillies grated carrots, coriander leaves are added to the dough prepared for making Akki Roti.  Plain akki roti is also made without adding any of these ingredients.  These roties are generally served with hot and spicy chutney.

INGREDIENTS:

3 cups Rice Flour
4 cups water
1 tbsp sesame oil
Salt to taste
1 cup finely chopped onions
2 finely chopped green chillies
1/2 cup grated carrot
Finely chopped coriander leaves

PREPARATION METHOD:

1. Boil 4 cups of water
2. When it come to boil, add 1 tbsp sesame oil and salt to taste
3. Reduce the flame and add 3 cups of rice flour
4. Mix well with a laddle
5. Absorbs all water and forms a soft dough
6. Transfer to a bowl
7. Add 1 cup finely chopped onion, 2 finely chopped green chillies, 1/2 cup grated carrot and finely chopped coriander leaves
8. Mix well and made small ball sized dough
9. Pat thin on oil paper or plantain leaf with greased fingers(Do not use this plastic covers)
10. Place on thava and peel off the paper or plantain leaf
11. Roast both sides in medium flame
12. Soft and tasty Akki Roti is ready
13. Serve hot with spicy chutney
