     Jowar is a millet, which is also called as Bajra in hindi and Kambu in Tamil.  It is full of protein and a very healthy substitute for rice.  It is also tastier than any other millet.  We get Jowar powder in almost all departmental shops.  With Jowar powder you can make a quick, easy and healthy breakfast within no time.  Here is a Jowar Dosa recipe, which is very easy to make, tasty and nutritious too.

INGREDIENTS:
1 cup Jowar flour
½ cup rice flour
1 cup finely chopped Onions
2 green chillies, finely chopped
2 tbsp coriander, finely chopped
Salt to taste
3 cups water

PREPARATION METHOD:
1.  Take a bowl and add 1 cup of jowar flour.
    2.  Add ½ cup of rice flour
    3.  To this add 1 cup finely chopped onions
    4.  Add finely chopped green chillies
    5.  Add finely chopped coriander
    6.  Add salt to taste
    7.  Add water and mix well
    8.  Batter should be in watery consistency    
    9.  Jowar dosa batter is ready   
  10.  Make crispy and tasty dosas
  11.  Jowar dosa is very nutricious and good for health

     Potatoes(Aloo) and Peas(Matar) make a good combination.  Aloo matar is one of the common recipes in different forms in different parts of India.  Here is a quick a easy recipe made with potatoes and fresh green peas.  This is a sidedish which goes well with chapathies, poories, roties, phulkas and parathas.

INGREDIENTS:
2 pieces Cinamon
2 Cardamom
1 tsp Cumin Seeds
1 tsp Turmeric powder
1 tsp Red Chilli powder
2 tsps Coriander powder
2 Onions, finely chopped
1 tbsp Ginger Garlic paste
2 Tomatoes, finely chopped
4 Potatoes, diced 
1 cup Green Peas(fresh)
2 or 3 tbsps Oil for sauteing
Salt to taste

PREPARATION METHOD:
1. In a pressure pan, heat 2 tbsps of oil
2. Add 2 pieces Cinamon, 2 Cardamom  and 1 tsp Cumin seeds
3. When it starts spluttering, add 1 tsp Turmeric powder, 1 tsp Chilli powder and 2 tsps Coriander powder 
4. Saute well
5. Add 2 finely chopped onions, 1 tbsp ginger garlic paste and 2 finely chopped tomatoes
6. Then add 4 diced potatoes and 1 cup of fresh green peas
7. Add salt to taste and saute well
8. Add a cup of water and pressure cook 
9. Open the lid and add 1 tsp garam masala and chopped coriander leaves
10. Saute till excess water evaporates
11. Your yummy Aloo matar is ready
12. Garnish with coriander leaves and serve hot with chapathies, poories, phulkas, roties and parathas

     Masala Chaas is otherwise called as Butter milk or Neer mor in tamil.  During summer season this is one of the most refreshing and healthy drink.  This is a very easy recipe and can be made within no time.  So try this and I am sure you would love it.

INGREDIENTS:
5 sprigs Mint/Pudina
2 tbsps chopped Coriander
1 Green Chillie
1 Inch Ginger
1 tsp Cumin, roasted & powdered
1/2 tsp Asafoetida
Salt to taste
1 cup Curd

PREPARATION METHOD:

1. Blend all the above ingredients together
2. Add required water and blend again in whipper
3. Transfer to serving glass
4. Serve chilled with ice cubes
5. Enjoy you summer with refreshing Masala Chaas or Spiced butter milk

GREEN CHUTNEY RECIPE/GREEN SANDWICH CHUTNEY/GREEN CHAT CHUTNEY/हरा चटनी


     Green chutney is a very simple but tasty chutney which is used in bread sandwiches and also in Chat items like, Bhel puri, Masala puri, Dahi puri, etc.  This chutney also goes well with starters.  This simple chutney can be made very easily without any heating process.  All we need is a blender and very few ingredients.

INGREDIENTS:
1 cup fresh Coriander leaves, chopped
1/2 cup fresh Mint/Pudina leaves
2 Green Chillies
1 inch Ginger
3 cloves Garlilc
1/4 cups Roasted gram
1 tbsp Cumin seeds
1/2 tbsp Salt - as per your taste
1/2 tbsp Sugar
1/4 cup Water

PREPARATION METHOD:
1. Blend all the above ingredients
2. Transfer it to a container

     In India, Mangoes are available in plenty during the months of April, May and June.  They can be stocked for the whole year during this season.  Mangoes can be preserved in many ways.  One such way is pickling the mangoes.  I am sure there can be no one who wouldn't like mango pickle.   Even in functions, lunch or dinner is never complete without pickles.  There are many types of mango pickles like Maavadu, Avakkai, Thokku, etc.  Mango thokku is made with grated mangoes.  When it is done, it is soft and mushy and tastes good along with curd rice.  Mango thokku recipe is very easy and can be prepared in very less time.  So prepare this recipe with the help of this demo and stock up the mangoes till the next season.

INGREDIENTS:
5 Raw Mangoes(sour), grated
200 ml Gingely oil
1 tbsp Mustard
1 tbsp Asafoetida
3 tbsps Red chillie powder
Salt to taste
1 tbsp Fenugreek seeds(roasted & powdered)

PREPARATION METHOD:
1. Grate 5 sour raw mangoes 
2. In a shallow pan, heat 200 ml gingely oil
3. Add 1 tbsp mustard seeds
4. When it splutters, add 1 tbsp asafoetida
5. Then add the grated mangoes
6. Saute well and close with a lid and reduce flame 
7. After 5 minutes, open lid and it is boiled well
8. Add 3 tbsps Red chilli powder 
9. Add 4 to 5 tbsps salt(use only table salt).  If the mangoes are very sour, you can add  more salt
10. Mix well, simmer and close the lid again
11. After 5 minutes open lid and colour is changed and well blended with oil
12. Now add 1 tbsp of dry roasted & powdered Fenugreek seeds
13. Mix well and close lid
14. After 5 minutes, open and oil separates
15. Your mouth watering mango thokku is ready
16. Preserve it in an airtight glass bottle or ceramic container. 
17. Please be sure to cap it only after it comes to room temperature 
*Do not store in steel, aluminium, tin or plastic container

 Channa Masala is one of the favourite dishes in India.  It is prepared in different methods in different parts of India.  I have prepared it in an easy method for people who have very less time to spend on cooking.  I have just added boiled potatoes for thickening the gravy.   A hand full of boiled chick peas can also be ground along with a piece of coconut and poppy seeds and added to the gravy as a thickening agent which is a very long process and time consuming.  Try this easy recipe and enjoy this Punjabi style Channa Masala with poori, chapathi, phulka, roti or even rice.

INGREDIENTS:
2 cups/400 gms Channa or Chick peas
2 Onions, finely chopped
3 Tomatoes, finely chopped
1 tbsp Ginger Garlic paste
1 Potato, boiled & mashed
2 pieces Cinamon
5 Cloves
2 Cardamom 
1 tsp Chilli powder
2 tsps Coriander powder
1/2 tsp Turmeric powder
1 tsp Garam masala powder
2 tbsp Oil

PREPARATION METHOD:
1. Soak 2 cups of Channa/Chick peas in water for 10 hours
2. Pressure cook Channa and keep aside
3. Heat pan and add 2 tbsps of oil
4. Add 2pieces Cinamons, 5 Cloves and 2 Cardamom
5. Next add 2 finely chopped onions and saute till it turns translucent
6. Add 1 tbsp ginger garlic paste and saute till raw smell goes off 
7. Add 3 finely chopped tomatoes and saute till it turns mushy
8. Add 1 tsp Chilli powder, 2 tsp Coriander powder, 1/2 tsp turmeric powder and 1 tsp garam masala and saute well
9. Add 1.5 or 2 cups of water
10. Now add 400 gms of pressure cooked Channa/Chick peas
11. Add salt to taste
12. Close lid for 5 minutes
13. Open lid and add boiled and mashed potato, mix well
14. Add 1 tbsp Chole Masala powder and boil for another 5 minutes
15.  Add finely chopped coriander leaves
16. Your favourite Channa Masala is ready...!
17.  Serve hot with poori, chapathi, phulka or rice

     Akki Roti is basically a famour Karnataka dish made out of Rice flour.  In kannada, Addi means rice.  Roti made out of rice flour is called Akki Roti.  Extra ingredients like onion, green chillies grated carrots, coriander leaves are added to the dough prepared for making Akki Roti.  Plain akki roti is also made without adding any of these ingredients.  These roties are generally served with hot and spicy chutney.

INGREDIENTS:

3 cups Rice Flour
4 cups water
1 tbsp sesame oil
Salt to taste
1 cup finely chopped onions
2 finely chopped green chillies
1/2 cup grated carrot
Finely chopped coriander leaves

PREPARATION METHOD:

1. Boil 4 cups of water
2. When it come to boil, add 1 tbsp sesame oil and salt to taste
3. Reduce the flame and add 3 cups of rice flour
4. Mix well with a laddle
5. Absorbs all water and forms a soft dough
6. Transfer to a bowl
7. Add 1 cup finely chopped onion, 2 finely chopped green chillies, 1/2 cup grated carrot and finely chopped coriander leaves
8. Mix well and made small ball sized dough
9. Pat thin on oil paper or plantain leaf with greased fingers(Do not use this plastic covers)
10. Place on thava and peel off the paper or plantain leaf
11. Roast both sides in medium flame
12. Soft and tasty Akki Roti is ready
13. Serve hot with spicy chutney
