HOMEMADE PANEER  RECIPE | घर में बनायें पनीर |  வீட்டிலேயே  செய்யலாம் பன்னீர் 


    Paneer is a product made out of milk.  Fresh milk is curdled and the water in it is squeezed out completely.  Then it is tied tightly and set for half an hour to form a paneer slab.  Paneer slab is diced into cubes and used in dishes like Paneer butter masala, Palak paneer, Shahi paneer, Paneer fried rice, Paneer nuggets, etc...

INGREDIENTS:

2 Lrs MILK 
2 Tbsps CURD/LEMON JUICE 

PREPARATION METHOD:

1. Boil 2 liters of milk.
2. When it comes to boil, add 2 tbsps of curd or lemon juice.
3. Keep stirring till milk curdles. 
4. Water separates.
5. Take a container with a drainer in it.
6. Place a thin cloth on it.
7. Drain the water in it.
8. Wait till the water drains completely and squeeze it off.
9. Fold the cloth tight in required shape and place a weight  on it.
10. Set aside for half an hour.
11. Now open the cloth and your fresh homemade paneer slab is ready.
12. Dice into cubes and prepare your favourite paneer dish.

MANGO MILKSHAKE RECIPE | आम का मिल्क शेक  | மாம்பழ மில்க் ஷேக் 



     Mangoes are available in plenty during summer.  Make the best use of this seasonal fruit which is full of vitamins.  Ripe mangoes can be consumed as it is. It can also be crushed and diluted by adding water and made juice. Adding milk to it makes it even more nutritious, healthier and tastier.

INGREDIENTS:

1 cup Ripe Mango(cubbed)
1 cup Milk(Chilled)
2 sps sugar
1/4th cup water or Ice cubes
Nuts to garnish

PREPARATION METHOD:


1. In a blender, add 1 cup ripe mango(cubbed),  2 sps sugar and 1 cup chilled milk.  
2. Blend to a smooth consistency.
3. Add water or ice cubes if required.
4. You can also add a scoop of vannila omango ice cream.
5. Your dellicious Mango Milkshake is ready.
6. Garnish with nuts on top.

VEGETABLE FRIED RICE RECIPE | वेजिटेबल फ्राइड राइस | வெஜிடெபிள் பிரைட் ரைஸ்


     Vegetable fried rice is an Indo-Chinese recipe.  It is one of the all time favourite rice.  Everybody, right from kids to old people would love to have fried rice any time.  There is no need for any side dish.  It is so tasty that it can be had just with tomato sauce.  Fresher  the vegetables, tastier the fried rice.  But only Basmathi rice goes well with it.    


     Vegetable Fried Rice is a very healthy rice because it is full of fresh vegetables.  You can give it to kids for lunch box.  They would definitely love it.
     Here I have described the recipe of a slightly Indianised version of Vegetable Fried Rice.  No soya sauce or vinegar.  You may wonder if the taste would differ.  But it is not so.

INGREDIENTS:


1 cup Carrot(chopped)
1 cup Beans(chopped)
1 cup Green peas(shelled)
2 cups Cabbage(finely chopped)
1 cup Capsicum(chopped)
1 cup Spring Onions(white portion-finely chopped)
1 cup Spring Onions(Green portion-finely chopped)
1 tbsp Garlic(finely chopped)
3 or 4 Green chillies(half slit)
500gms Basmathi rice
Oil for sauteing


PREPARATION METHOD:

1. Take a heavy bottomed vessel and pour oil.
2. First add finely chopped garlic and then you can add 1       
    cup of spring onions(white portion) and green chillies.
3. Next you can add all the vegetables one by one.  First 
    beans, green peas, carrot, cabbage, capsicum and finally 
    spring onions(green portion)
4. Keep sauteing the vegetables in high flame.  Do not lower 
    the flame.  But see to it that the vegies do not get burnt.  
5. When the vegies are half done, add  salt and pepper 
     powder and mix well.  At this stage, you can add soya 
     sauce(optional).
6. Add cooked Basmathi rice and mix well without breaking 
    the rice. 
7. Enjoy your steaming Vegetable Fried Rice with Gobi 
    Manchurian which goes very well with fried rice.

MINT/PUDHINA CHUTNEY RECIPE | पुदीना चटनी रेसिपी | புதினா சட்னி ரெஸிபி 

     Chutney plays a vital role in south Indian food,  especially breakfast.  Any South Indian breakfast is incomplete without a chutney.  There are different types of chutneys like coconut chutney, onion chutney, groundnut chutney, tomato chutney, ginger chutney, curry leaves chutney, chow-chow chutney and so on... Mint or Pudhina chutney is an ideal side dish for breakfast like Idli or Dosa.  It tastes so good and also easy to prepare within 5 to 10 minutes. It is my younger daughter's favourite chutney and of-course  my husband's favourite too.

   


     Mint leaves are healthy and good for digestion.  Mint leaves can also be used in Tomato chutney.  You get a red chutney with mint flavour.

INGREDIENTS:


1 bunch Mint 
2 tbsp Urad dhal
5 Red chillies 
1 inch piece Ginger  
1/2 cup Coconut (cut into small pieces)
1 small piece Tamarind  
Salt to taste
2 tbsp Oil for frying
Water for blending
For tempering

1 tbsp oil
1 tsp Mustard
1 tsp urad dhal

PREPARATION METHOD: 
  1. In a kadai or pan add 2 tbsp oil, 2 tbsp urad dhal and 5 red chillies. 
  2. When it turns golden, add ginger and Mint/Pudhina and saute for 2 minutes till it shrinks a little.
  3. Let it cool completely and add all the fried ingredients along with 1 small piece of tamarind, salt to taste and 1/2 cup of coconut pieces to a blender.
  4. Add water to required consistency and blend to a smooth paste.  Transfer it to a container.
  5. For tempering, heat 1 tbsp of oil and add 1 tsp of mustard and urad dhal to it. 
  6. When it splutters add on top of chutney.
  7. Enjoy your tasty Mint/Pudhina chutney with idli or dosa.
