     Ladiesfinger is one of the favourite  vegetables of children.  The fact behind this is that all moms raise their kids saying that ladiesfingers are good for our brain and that, by consuming ladies fingers we will score good marks in Mathematics.  There are many recipes using Ladiesfingers.  One such interesting recipe is Stuffed Ladies fingers.  It is different from the usual recipes.  Masala is stuffed into each ladiesfinger and then fried.  Its a bit time consuming, but it is worth spending time on such a wonderful recipe.

INGREDIENTS:

1/2 Kg Ladies fingers
2 tbsps Coriander powder
1/2 tsps Red chilli powder
1 tsp Garam masala powder 
1 tsp Turmeric powder
1 tsp Cumin powder
1 tsp Cumin seeds
1 tsp Fennel seeds
1/2 tsp Asafoetida
Salt to taste
2 to 3 tbsps Gram flour
2 Onions finely chopped

PREPARATION METHOD:


1. Dry roast the gram flour in low flame till gives out a good flavour.
2.  Mix all the powders together with roasted gram flour, salt and asafoetida.
3. Slit each ladies finger and stuff the mixture generously. 
4. Pour oil in the kadai and add cumin seeds and fennel seeds. Let it splutter.
5. Add onions and fry till it turns translucent.
6. Now add the stuffed ladies fingers and fry it in low flame. Close it with a lid for a few minutes.
7. Open the lid and turn the ladies fingers gently without smashing it.
8. Leave it for 5 minutes in low flame.
9. Your tasty Stuffed Ladies fingers are ready.
10.  Enjoy it with Hot phulkas or rice.

Ingredients:

Paneer           - 250 gms(cut into cubes)

Garlic             - 4 or 5 pods

Onions           - 2 (cut into long pieces)

Tomatoes      - 3 (cut into pieces)

Cashewnuts  - 10 or 12(ground into paste)

Chilli powder                   - 1 1/2 tsp

Coriander powder          - 3 tsp

Cumin powder                - 1 tsp

Garam masala powder - 1 tsp

Oil                         - for frying onions & tomatoes

Butter                  -  1 tblsp

Ghee                    - 1 tblsp

Grind:

    Grind cashewnuts into fine paste adding water.

Preparation:

    1) Take a kadai and fry Garlic, Onions Tomatoes in a spoon of oil.  Let it cool for some time.  Now grind the fried           garlic, onions and tomatoes into paste adding water.

    2) Take a pan and some butter.  When the butter melts, add cumin powder.  Add the ground cashewnut paste. 

    3) When melted butter separates from the cashewnut paste, add the ground mixture of garlic, onions and                     tomatoes. 

    4) Add chilli powder, coriander powder and salt.

    5) Let it boil for sometime till the raw smell of chilli powder changes.  

    6) Now add paneer cubes to the gravy.

    7) Switch off the stove and add garam masala powder fried in a spoon of ghee.

    8) Transfer the gravy to a serving dish and as a final touch, add some cream on top for garnishing.

 Masal vadai is a crispy snack made with bengal gram dhal.  It is a very easy and tasty snack.  It is also full of protein.

INGREDIENTS:

Bengal gram dhal  - 2 cups
Onions                     - 3 big size
Green chillies          - 2 to 3
Ginger                      -  1 inch piece
Salt                           - As per taste
Cinamon                 - one small piece
Ani seeds                - 1/2 teasooon
Coriander leaves   - 1/2 bunch
Curry leaves           - 1 or 2 leaflets
Oil                            - for frying

1) Soak bengal gram dhal in water for at least two hours.  

2) Grind soaked bengal gram dhal, green chillies, ginger, cinamon, ani seeds and salt.

3) Add chopped onions, coriander leaves and curry leaves to the ground mixture and mix it well.

4) Heat oil in a frying pan.  Make small balls of the mixture and press it in your palm to make    vadais and deepfry in oil.

5) Your crispy masal vadais are ready.

INGREDIENTS - I (For grinding)


Coriander leaves - 2 big bunches
Red Chillies           - 8 to 10
Tamarind               - small lemon size
Salt                          - As per your taste


INGREDIENTS - II (For seasoning)


Gingelly Oil  - 4 to 5 tbl spoons
Mustard       - 1/2 tbl spoon
Urad dhal     - 1/2 tbl spoon
Asafoetida   - 1/2 tbl spoon


PREPARATION METHOD:

1) Grind all the items mentioned in Ingredients - I.

2) Take a shallow pan.  Pour oil in it.  Add mustard and urad dhal.  When it starts spluttering, add asafoetida.  Finally add the ground mixture.  

3) Let it boil for some time.  Close it with a lid to avoid spraying out when boiling. Let it boil till the oil separates.  

4) Your tasty and healthy coriander chutney is ready now.  You can have it with idly, dosa, roti or even pongal.

     Gobi 65 is one of the favourite starters of all age groups.  It is somewhat the dry version of Gobi Manchurian.  It is also called as Gobi Manchurian or Gobi fry.  Whenever we go to restaurants, one of our starters would definitely be Gobi Manchurian. Why go to restaurants when we can make it easily at home.  Home made food is always good for health.  So try this recipe at home and stay healthy.

INGREDIENTS:

1 CAULIFLOWER, big size
1 cup Corn Flour
1/2 cup Maida
2 tbsps Rice Flour
1 tsp Ginger Garlic paste
1 tsp Red Chilli powder
Salt to taste
1 pinch Orange food colour

PREPARATION METHOD:

1. Separate the flowerets from Cauliflower
2. Boil water in a large vessel and soak the flowerets for 5 minutes in hot water added with a little rock salt.  By doing this the small insects in the cauliflower would get killed
3. After 5 minutes remove the flowerets from hot water and keep aside 
4. Then take a dry vessel and add all the ingredients except Cauliflower
5. Mix well and then add the flowerets to it and toss it well 
6. As the flowerets are wet, the dry mixture gets coated to the flowerets easily
7. Heat oil in a frying pan 
8. Add the masala coated cauliflowerets to hot oil and deep fry till it turns crispy 
9. Your tasty, crispy, kurkure Gobi 65 is ready
10. Serve hot with tomato sauce or you can even make Gobi manchurian gravy or semi gravy with it, which I will be showing in another video

ONION MEDHU VADAI

Ingredients:

Urad dhal      - 400 gms or 2 cups

Onion             -  2(Big size)

Green chillies - 2 or 3

Ginger             - 1 inch piece

Coriander        - a hand full

Curry leaves    - a little

Salt                   - To taste

Oil                     - For frying 


Preparation:

    1) Soak Uradh dhal in water for 2 hours.

    2) Grind green chillies, ginger and salt first.  Add uradh dhal to it and grind into smooth batter.

    3)     Use wipper in the mixer grinder for a minute to get a fluffy batter.

    4) Add chopped onions, coriander and curry leaves to the batter.

    5) Mix well and make small balls with the batter and shape vadais with your hands and deep fry in oil.

    6) Onion medhu vadai is ready...! Serve hot with coconut chutney or sambar.
