TOMATO ONION CHUTNEY RECIPE | टोमेटो अनियन चटनी रेसिपी | தக்காளி வெங்காய சட்னி ரெஸிபி 




INGREDIENTS:

Tomatoes - 5
Onions - 3
Red Chillies - 5
Ginger - 1 inch piece
Garlic - 4 pods
Oil - 3 tbsps
Salt to taste

PREPARATION METHOD: 
1) Heat oil in a pan
2) Add Red chillies and toss a little
3) When it is a little roasted, add Onions, chopped lengthwise
4) Saute till translucent
5) Add Ginger and Garlic  
6) Then add Tomatoes, sliced into large pieces
7) Saute till tomatoes turn soft
8) Add everything together to a mixture jar and grind coarse 
9) Heat a pan and add 1 ladle of oil
10) When it starts spluttering, and the ground mixture
11) Allow it to boil for 5 minutes
12)Transfer to a bowl 
13) Serve hot with Idlies, Dosas or Ven pongal
14) This Red chutney can also be used in place of the red chutney used for applying in Masala dosa

PEANUT CHUTNEY RECIPE/GROUNDNUT CHUTNEY RECIPE/मूंगफली चटनी रेसिपी

   
       
     Peanuts are good source of protein and good for health.  A hand full of peanuts daily would keep our body healthy.  Here is an easy and quick chutney recipe for you.  Try it at home and enjoy the goodness of peanuts with your breakfast.

INGREDIENTS:

For Grinding:
1 cup Peanuts
5 Red chillies
1/4 cup Coconut pieces
Small piece of Tamarind
Salt to taste

For Tempering:
1 tbsp Oil
1 tsp Mustard
1 tsp Urad dhal
Few Curry leaves

PREPARATION METHOD:

1. In a shallow pan dry roast 1 cup of peanuts and set aside
2. In the same pan dry roast 5 red chillies
3. In a blender, add roasted peanuts and roasted red chillies
4. Add a small piece of tamarind
5. Add salt to taste and blend smooth
6. Transfer to serving bowl
7. For tempering, heat oil 
8. Add mustard seeds and urad dhal
9. When it starts spluttering, switch off the flame and add few curry leaves
10. Pour on top of ground chutney
11. Your tasty and lip-smacking peanut chutney is ready 
12. Serve with hot idlies or dosas

Idli Milagai podi is a powder substitute for the traditional South Indian chutney varieties. It is usually mixed with gingely oil and used as a dipping condiment for South Indian breakfast varieties like idli, dosa or adai.  It is very easy for packing lunch box and also for travelling.  It will not get spoilt so easily.  Just mix the idli milagai podi with gingely oil and apply generously on the idlies.  It stays even for two days.

INGREDIENTS:
1/2 cup Sesame seeds(preferably black)
2 tbsps Oil
1 cup Channa dhal
1 & 1/2 cups Urad dhal
1 cup Red Chillies
2 tbsps Asafeotida/Hing
Few Curry Leaves
Small lemon sized tamarind
3 or 4 pods Garlic
Salt to taste


PREPARATION METHOD:
1. Dry roast 1/2 cup of Sesame seeds and set aside
2. Heat a shallow pan and add 2 tbsps oil
3. Add one cup Channa dhal and 1 & 1/2 cups Urad dhal
4. Saute till it turns golden brown 
5. Add few Curry leaves to it and saute and when it turns crispy, transfer it to a bowl and set aside
6. Again add one tspn oil in the pan and add 1 cup red chillies 
7. Saute till it pufs up and transfer it to the bowl and set aside
8. Allow it to cool completely
9. Now add all the roasted ingredients together into a blender
10. Also add a small lemon sized tamarind, salt to taste and a small piece of Jaggery 
11. Blend them together to a coarse powder
12. Do not powder it too smooth
13. Your tasty Idli Milagai podi is ready
14.  Mix with Gingely oil and serve with hot idlies

GREEN CHUTNEY RECIPE/GREEN SANDWICH CHUTNEY/GREEN CHAT CHUTNEY/हरा चटनी


     Green chutney is a very simple but tasty chutney which is used in bread sandwiches and also in Chat items like, Bhel puri, Masala puri, Dahi puri, etc.  This chutney also goes well with starters.  This simple chutney can be made very easily without any heating process.  All we need is a blender and very few ingredients.

INGREDIENTS:
1 cup fresh Coriander leaves, chopped
1/2 cup fresh Mint/Pudina leaves
2 Green Chillies
1 inch Ginger
3 cloves Garlilc
1/4 cups Roasted gram
1 tbsp Cumin seeds
1/2 tbsp Salt - as per your taste
1/2 tbsp Sugar
1/4 cup Water

PREPARATION METHOD:
1. Blend all the above ingredients
2. Transfer it to a container
3. Didn't I say it is very simple?
4. Enjoy your tasty and healthy "All purpose Green chutney" 
5. Use it for bread sandwiches
6. It also goes well with starters
7. Use it in Chat items like Bhel puri, Sev puri, Pani puri, Dahi puri and also for Samosas

MINT/PUDHINA CHUTNEY RECIPE | पुदीना चटनी रेसिपी | புதினா சட்னி ரெஸிபி 

     Chutney plays a vital role in south Indian food,  especially breakfast.  Any South Indian breakfast is incomplete without a chutney.  There are different types of chutneys like coconut chutney, onion chutney, groundnut chutney, tomato chutney, ginger chutney, curry leaves chutney, chow-chow chutney and so on... Mint or Pudhina chutney is an ideal side dish for breakfast like Idli or Dosa.  It tastes so good and also easy to prepare within 5 to 10 minutes. It is my younger daughter's favourite chutney and of-course  my husband's favourite too.

   


     Mint leaves are healthy and good for digestion.  Mint leaves can also be used in Tomato chutney.  You get a red chutney with mint flavour.     

MINT/PUDHINA CHUTNEY RECIPE VIDEO

INGREDIENTS:


1 bunch Mint 
2 tbsp Urad dhal
5 Red chillies 
1 inch piece Ginger  
1/2 cup Coconut (cut into small pieces)
1 small piece Tamarind  
Salt to taste
2 tbsp Oil for frying
Water for blending
For tempering

1 tbsp oil
1 tsp Mustard
1 tsp urad dhal

PREPARATION METHOD: 
  1. In a kadai or pan add 2 tbsp oil, 2 tbsp urad dhal and 5 red chillies. 
  2. When it turns golden, add ginger and Mint/Pudhina and saute for 2 minutes till it shrinks a little.
  3. Let it cool completely and add all the fried ingredients along with 1 small piece of tamarind, salt to taste and 1/2 cup of coconut pieces to a blender.
  4. Add water to required consistency and blend to a smooth paste.  Transfer it to a container.
  5. For tempering, heat 1 tbsp of oil and add 1 tsp of mustard and urad dhal to it. 
  6. When it splutters add on top of chutney.
  7. Enjoy your tasty Mint/Pudhina chutney with idli or dosa.

INGREDIENTS - I (For grinding)


Coriander leaves - 2 big bunches
Red Chillies           - 8 to 10
Tamarind               - small lemon size
Salt                          - As per your taste


INGREDIENTS - II (For seasoning)


Gingelly Oil  - 4 to 5 tbl spoons
Mustard       - 1/2 tbl spoon
Urad dhal     - 1/2 tbl spoon
Asafoetida   - 1/2 tbl spoon


PREPARATION METHOD:

1) Grind all the items mentioned in Ingredients - I.

2) Take a shallow pan.  Pour oil in it.  Add mustard and urad dhal.  When it starts spluttering, add asafoetida.  Finally add the ground mixture.  

3) Let it boil for some time.  Close it with a lid to avoid spraying out when boiling. Let it boil till the oil separates.  

4) Your tasty and healthy coriander chutney is ready now.  You can have it with idly, dosa, roti or even pongal.
