MINT/PUDHINA CHUTNEY RECIPE | पुदीना चटनी रेसिपी | புதினா சட்னி ரெஸிபி 

     Chutney plays a vital role in south Indian food,  especially breakfast.  Any South Indian breakfast is incomplete without a chutney.  There are different types of chutneys like coconut chutney, onion chutney, groundnut chutney, tomato chutney, ginger chutney, curry leaves chutney, chow-chow chutney and so on... Mint or Pudhina chutney is an ideal side dish for breakfast like Idli or Dosa.  It tastes so good and also easy to prepare within 5 to 10 minutes. It is my younger daughter's favourite chutney and of-course  my husband's favourite too.

   


     Mint leaves are healthy and good for digestion.  Mint leaves can also be used in Tomato chutney.  You get a red chutney with mint flavour.

INGREDIENTS:


1 bunch Mint 
2 tbsp Urad dhal
5 Red chillies 
1 inch piece Ginger  
1/2 cup Coconut (cut into small pieces)
1 small piece Tamarind  
Salt to taste
2 tbsp Oil for frying
Water for blending
For tempering

1 tbsp oil
1 tsp Mustard
1 tsp urad dhal

PREPARATION METHOD: 
  1. In a kadai or pan add 2 tbsp oil, 2 tbsp urad dhal and 5 red chillies. 
  2. When it turns golden, add ginger and Mint/Pudhina and saute for 2 minutes till it shrinks a little.
  3. Let it cool completely and add all the fried ingredients along with 1 small piece of tamarind, salt to taste and 1/2 cup of coconut pieces to a blender.
  4. Add water to required consistency and blend to a smooth paste.  Transfer it to a container.
  5. For tempering, heat 1 tbsp of oil and add 1 tsp of mustard and urad dhal to it. 
  6. When it splutters add on top of chutney.
  7. Enjoy your tasty Mint/Pudhina chutney with idli or dosa.
